Selecting wine, entertaining topics this week
Information on selecting wine and recipes for entertaining elegantly will be the featured topics on “Creative Living” on Tuesday at noon and on Saturday at 2 p.m. (All times are Mountain). “Creative Living” airs on public broadcasting station, KENW-TV, from Eastern New Mexico University in Portales.
Sunny Cristadoro is a chef with St. Supery Vineyards and Winery in Rutherford, Calif. She will talk about the philosophy of wine, discuss the basic steps to selection and explain about variety, vintage, and more.
Joan Toole will talk about how to entertain elegantly with ease. Her cookbook features recipes for the heart and soul, and she’ll show what she means by cooking “en concert.” Toole lives in Lake Forest, Ill.
Information on making hanging canopies for beds, preparing quick meals, and maintaining hardwood floors will be the featured topics on “Creative Living” on Tuesdayat 9 p.m. and on Thursday at noon.
Andrea Schewe is a pattern designer for Simplicity Pattern Company in New York City. She will show how to make a canopy for a bed using a large wooden embroidery hoop.
Connie Moyers will demonstrate two recipes as well as share other suggestions for preparing quick meals using either an electric skillet or a microwave oven. Moyers is an Extension Home Economist with the New Mexico Cooperative Extension Service, and she lives in Clovis.
Bruce Johnson represents Minwax in Upper Saddle River, N.J. He will show how to install a new hardwood floor or rejuvenate an old one.
“Creative Living” is produced and hosted by Sheryl Borden. The show is carried by more than 118 PBS stations in the United States, Canada, Guam and Puerto Rico and is distributed by Westlink of Albuquerque.

Faux Fried Chicken
8 skinless breast fillets (1 1/2 to 2 pounds)
1/2 cup seasoned breadcrumbs
1 tablespoon olive oil
Rinse the chicken and pat dry. Place in a plastic bag with the breadcrumbs, shaking to coat. Preheat a heavy skillet over medium-high heat. Spray with nonstick vegetable cooking spray. Add the olive oil. Cook the chicken 4 pieces at a time in prepared skillet until brown on both sides, turning once. Reduce heat to low. Add all of the chicken to the skillet. Simmer, covered, for 10 minutes or until tender and cooked through. Keep warm until serving time.
