Information on preparing side dishes with pecans and helping children develop their self-esteem will be the featured topics on “Creative Living” at noon on Tuesday and at 2 p.m. on Saturday.
Ann Cox, food specialist with the Western Pecan Growers Assn. in College Station, Texas., says that vegetables, side dishes and salads are often overlooked when planning recipes with pecans. She’ll talk about the nutritive value and share some delicious and unusual recipes that call for pecans.
Judi Moreo, motivational speaker with Turning Points International, will talk about ways parents can help build their child’s self-esteem. She lives in Las Vegas, Nev.
Information on changing one’s self and sewing with decorative threads will be the featured topics on “Creative Living” at 9:30 p.m. on Tuesday and noon on Thursday.
Author and motivational speaker, Judi Moreo will talk about her newest book, “You Are More Than Enough” and tell how a person can change themselves beginning with their own personal feelings. She will discuss the “worry trap,” mentors, choices, goal setting, and other positive factors in our lives.
Becky Hanson, education manager with Singer Sewing Co. in Lavergne, Tenn., will show how to sew with heavy threads, ribbons and even lightweight yarns and trims to add dimension, originality and new interest to projects.
CURRIED CHICKEN PECAN SALAD
3/4 cup mayonnaise
2 tsp. lime juice
3/4 tsp. curry powder
2 cups cooked chicken, chopped
1 cup pineapple chunks
1 cup seedless grapes, cut in half
3/4 cup sweetened dried cranberries
1 cup chopped pecans
Sliced green onions, garnish
Combine mayonnaise, lime juice and curry powder in a large mixing bowl.
