Tracy Kelly is the general manager of Sodexo catering at Eastern New Mexico University. Sodexo not only creates meals for students but also caters to the needs of the surrounding area for weddings, parties or any special occasion.
Kelly, who moved to Portales in April, said Sodexo provides a variety of menu items for different organizations.
Sodexo operates out of Washington, D.C. Their menus are planned by dietitians familiar with regional tastes, Kelly said.
“We have a cycle menu that we run, that they send to us once a year,” Kelly said. “It might be updated based on new trends.”
Sodexo does a lot of marketing research for trends in how students eat because most are grazers, which means students tend to eat small meals over the course of the day.
Kelly said Sodexo has been working to change what they offer students to eat, cutting back on sodium and fats.
“We’re changing to a lot more fruits and vegetables,” Kelly said.
Sodexo put together the box meals sold for the ENMU Founder’s Day picnic and the Dora High School prom.
“We pretty much cater for any special event, all they have to do is ask,” Kelly said.
Sodexo features theme-type buffets, such as, Big Sombrero (Mexican), Western Roundup (barbecue brisket, smoked pork) Asian Flair, Little Italy and a build-your-own buffet.
They also provide appetizers, fruit platters, finger sandwiches, dips and watermelon carvings.
“With catering they do any kind of menu they want from us,” Kelly said. “It is just a matter of getting with us if they want something special.”
